THAI BANANAS

It is mid April and the fuchsia plant is in flower at The Manor, which I used as a dressing. This is a brilliant dessert , pour 350 ml of coconut milk into a small saucepan along with 2 tbs of castor sugar , 1/2 tsp of salt and stir until the sugar has dissolved . Now add the banana pieces and cook , stirring occasionally until the bananas are soft but not mushy. Divide the mixture between your serving dishes / glasses and scatter with sesame seeds and dress with a fuchshia flower. This dessert can be prepared for any occasion .
