Preheat your oven to 160 deg C
Slice enough cherry tomatoes to fill an oven tray .
Slice the cherry tomatoes in half and sprinkle with salt , minced garlic and dried oregano .
Now spread the tomatoes out on the oven tray lined with baking paper .
Place in the preheated oven and allow to semi dry out , the cherry tomatoes should be still plump and the skins a little wrinkly .
Remove from oven and allow to cool slightly , place in a container and scatter with dried parsley and cover with olive oil .
