Place 1 kg of chopped rhubarb in a large pot along with 2 medium bown onions chopped, 660 gm of soft brown sugar, 240 gm of sultanas, 750 ml of apple cider vinegar, 1 tbs of mustard seeds, 1 tsp`of mixed spice and 1 dsp of minced ginger.
Now bring this mix to the boil.
Then reduce the heat to a simmer, stirring occasionally for about 1.5 hours when the mixture will have thickened.
Pour into hot sterilised jars and seal.
