BISCOTTI (CHOC -ALMOND )
Preheat your oven to 180 deg C .
Mix together 2 cups of plain flour , 1/2 cup of cocoa powder and 1 tsp of bicarbonate soda into a bowl .
Mix in 1/4 cup of melted butter / marg , 2 tbs of milk and 2 tbs of Apera .
Make a well in the middle of the flour mixture ,add 1 cup of castor sugar , 200gm of almond flakes and 2 well beaten eggs .
Mix well to form a soft dough .
Now turn the dough onto a lightly floured surface and knead until smooth .
Divide the dough into 4 equal portions .
Roll out each portion of dough to make 4 x 5mm thick and 4cm wide strips.
Place the strips on a baking tray lined with baking paper .
Brush the surfaces with beaten egg yolk and bake in the preheated oven for 30 minutes or until the almond flakes are lightly browned .
Remove the baking tray from the oven and cut the strips into 1 cm slices , return to the oven ,cut side down and bake for 10 minutes or until the biscotti is dry .
