Passionfruit curd is really easy to prepare .
Place 125 gm of chopped butter in a saucepan along with 155gm of castor sugar , the pulp of 15 passionfruit and 4 lightly beaten egg yolks .
Whisk these together and heat over a low heat .
Cook , stirring for 10 - 15 minutes till the sugar dissolves and the mixture thickens .
Transfer to sterilised jars and cover with cling wrap and place in the refrigerator until cooled .
