FRESH FRUIT SALAD CAKE
Ingredients....1 orange, 2 apples, 2 ripe bananas, 1 cup of sultanas, 185gm of butter/ marg, 3/4 cup of castor sugar, 2 cups of s.r. flour.
Preheat your oven to 180 deg C.
Liberally spray a bundt pan and set aside.
Peel and slice the orange removing any seeds.
Peel , core and chop 2 apples roughly,
Peel 2 ripe bananas and cut into chunks .
Place all fruits into a processor and blend until smooth.
Place into a bowl and add 1 cup of sultanas , 185 gm of melted margarine /butter and 3/4 of a cup of castor sugar and 2 cups of self raising flour.
Use a wooden spoon to mix well .
Pour the fruit batter into the well greased bundt pan.
Bake in a well heated oven on 180 deg C for 55 mins or until cooked when tested.
Leave in the pan for 5 mins before turning onto a wire cake cooler.
I like this cake sliced and spread with lemon curd.
