ORANGE ,GINGER CARROT AND COCONUT SALAD

Place together in a large bowl 2 cups of cooked black quinoa ,
4 medium carrots grated
1/2 cup of raisins
3/4 cup of shredded coconut
juice of 1 orange
1 tbs of minced ginger
2 tbs of extra virgin olive oil
3 tbs of lime juice
cracked black pepper to taste
Mix to combine and refrigerate for at least an hour
Toss well before serving ...
Delicious !
