GINGER AND APPLE UPSIDE DOWN CAKE
Preheat your oven to 180 deg C .
Lightly grease and line a 20 cm round cake pan with baking paper .
Sprinkle the lined pan with soft brown sugar .
Arrange 2 peeled and thinly sliced apples over the base of the cake pan .
In a separate bowl , mix together 4 cups of plain flour with 1 tbs of ground ginger and using your fingers rub in 225 gm of room temp butter/ marg until the mix looks like fine breadcrumbs .
Now add 2 cups of castor sugar , 4 tbs of golden syrup and 1 dsp of bicarbonate of soda mixed in 1 and 1/2 cups of milk .
Mix the batter until all ingredients are well combined .
Finally add 2 tbs of lemon juice .
Pour the batter over the apple slices on the base of the pan .
Bake for 65 minutes or until a skewer inserted into the cake comes out clean .
Turn the cake onto a serving plate with the apples as the topping , carefully removing the baking paper .
