PRAWN AND WHITE BEAN HOT SALAD WITH A TOMATO DRESSING
I used to make this regularly for my son Dale when he was home and studying at Monash university .
This was one of the easily prepared meals when I arrived home from work at Thrifty Eyewear .
Combine 800 gm of tinned white beans , drain and transfer to a large bowl .
Now combine 250 ml of apple cider vinegar ( you could use dry white wine , but in his university days Dale did not consume alcohol ....( yes things have changed ) , 12 medium uncooked , cleaned prawns cleaned with tails intact , the juice of 1 lemon , and thinly chopped rind of 1/2 lemon along with 1 dsp of fennel seeds , 250 ml of water in a small sacepan , bring to a simmer over a low heat .
Remove from heat and stand for 15 minutes ( drain ).
Remove the prawns and add to the white beans .
Thinly slice a fennel bulb and 1/2 a thinly sliced red onion and 2 tbs of chopped fresh parsley , season to taste ... I always added a small chopped chilli , seeds intact . ( optional ). Set aside .
Heat a good glug of rice bran oil / canola oil in a pan and add 300 gm of sliced cherry tomatoes and 1 tbs of minced garlic .
Cook until tomatoes begin to soften , stir through 2 tbs of lemon juice .
season with cracked black pepper to taste and pour into the bean and prawn mixture .
Toss to combine and serve .
