POLVORONES ........MEXICAN CHRISTMAS COOKIES ( SHORTBREAD )

Preheat your oven to 180 deg C. Grease a baking tray and line with baking paper . In the bowl of your electric mixer , place 1/2 cup of room temperature butter/ marg , 1/2 cup of room temperature copha and 1/2 cup of granulated sugar .Beat together until crteamy . In a small bowl beat together 2 egg yolks add to the sugar mixture a little at a time . Now add the finely grated zest and juice of 1 orange . In a separate bowl mix together 2 cups of almond meal with 2 cups of plain flour . I combined the flour mix with the mixture in the bowl of the beater and mixed well. The dough will be crumbly . Turn the dough onto a lightly floured board to 1/2 " thick , use a cookie cutter to cut into small shapes , place on a baking paper covered oven tray . Your other option is divide the dough in half and form into 2 large circles 1/2 " thick and place on a baking paper covered oven tray , carefully mark both circles of dough with a sharp knife into triangles .( Serving size ) . Place on the prepared baking tray and bake for 15 minutes, intil lightly golden - not a minute more . Remove from oven and cool completely . Sprinkle with icing sugar ( optional )and store in airtight container . These are the best shortbread I have ever made and will serve these all year round !
