A COLONIAL BOSTON BUN
This recipe for a colonial Boston bun incorporates 1/2 cup of cooked mashed potato.
You need to use a potato that is suited to mashing ( all rounder ).
Preheat your oven to 160 deg C.
Grease a 20 cm round cake pan and line with baking paper.
Using your electric mixer cream together 1/2 cup of cold mashed potato with 1/2 cup of raw sugar, making sure the mixture is free of any lumps.
Now add 125ml of milk ( 1/2 cup ) along with a heaped cup of self raising (firmly packed)to the mix.
Finally stir through 3/4 cup of sultanas and place the mixture in the prepared pan and carefully smooth over.
Place the pan in the preheated oven for 30 minutes or until golden .
Icing ....
Mix together 1 cup of icing sugar (125gm ) in a small bowl with 15gm ( 1 dsp ) of melted butter / marg and stir through 2 tbs of warm water.
When the bun has completely cooled spread the icing over the top and sprinkle with cinnamon sugar and top with a sprinkle of desiccated coconut.
Delicious.
