POLENTA CHIPS

Polenta from Northern Italy , is generally served plain with a ragout such as a bolognaise sauce or firm it can be served along side any meat . Hot fried polenta can also be served with anchovies and sliced olives or toppings of your choice and as served as crostini . Polenta chips are my favourite and they are on the menu tonight . Bring 2 litres of water and 1 dsp of salt to the boil ( 8 cups ), then sprinkle over 2 cups of polenta , stirring consistantly , making sure there are no lumps . Reduce heat and continue stirring until the mixture is really thick , adding dried oregano , parmesan and dried chilli , whatever is your choice . To prepare the polenta chips , spread the mixture into an oiled and lined baking tray . Place in the refrigerator to cool and then leave at room temperature . Preheat your oven to 180 deg C Then slice the polenta into slices and drizzle with rice bran oil and bake until golden
