Chocolate gnache icing
Ross is an Arsenal soccer club supporter, and so decided to replicate the Arsenal home ground as the cake top .
Mississipi Mud Cake :
This recipe is for a 20 cm cake tin ...( The birthday cake above used 4 times the amounts shown )
Pre heat your oven to a constant 160 deg C.
In a large bowl ( heatproof ) mix together
125gm of dark cooking chocolate chopped
100gm of sliced butter ( room temp)
3/4 cup of hot water
1/4 cup of southern comfort
Heat this mix over boiling water ( do not let the water touch the base of the bowl ) till the mix is smooth .
Allow to cool...slightly
Add 3/4 cup of sifted plain flour
1/2 cup of sifted self raising flour
1/4 cup of sifted cocoa
2 eggs lightly beaten
To the warm chocolate mixture , beat until thick and smooth .
Pour into your cake tin
Bake for 30 to 40 minutes , or till firm to touch.
Remove from the oven
Cool the cake in the tin
Then turn onto a wire rack
Prepare ganache ( a combination of heavy cream and chocolate) , spread while warm and top with chocolate soil ( Finely grated chocolate )
This was a huge learning exercise , in changing quantities , varying cooking times , using large cooking trays ( roasting tin )...It took four tries , a bit of stress , lots of phone calls between my friend Laufa and myself .
What we ended with was a cake ,what we achieved was success through experience and experimenting.
