BERBER BEEF STEW...WED 5 TH MARCH

 
 
Chop an onion ,  4 cloves of garlic , 1 carrot cut into ribbons , 2 zucchinis cut and sliced into 1/2 moons .

Place the garlic and onions into a heated pan , cook until tender  then add the carrots and zucchini.

Cut  600gm of beef fillet into cubes and add to the vegetables ,mix well to  allow the beef to seal .

Reduce the heat to low
 Add 2 tbs of tomato puree ,  2 tsp of  ground cumin ,  2 tsp of minced ginger , 2 small red chillies with seeds ,  1 tsp of paprika , 1 tsp of ground black pepper , 1/2 tsp of cinnamon ,1 tsp of flour , 1 tbs of  clear honey and 1 cup of boiling water or a good beef stock ,

 Mix well and bring to the boil , then cover and simmer for 10 minutes. or until ready to serve.

Now mix 1 cup of couscous with 1 cup of boiling water , cover until the water is absorbed .

Remove the lid from the stew and simmer for a further 5 minutes , the sauce will reduce and thicken .
Stir the couscous to make it fluffy  and divide into serving bowls , spoon over the stew and sprinkle with sesame seeds.
Serve with a bowl of natural yoghurt.
