Chop and peel 2 kg of green tomatoes , 1 kg of onions , chop up 1/2 cauliflower , peel and chop 1 cucumber .
Put all the vegetables into a large bowl , pour over 2 litres of water and stir in 1 cup of salt.This must stand for at least 8 hours or overnight.
First thing next day place all the vegetables and liquid into a large pot and bring to the boil , boil for 2 minutes , then drain.
In another saucepan combine 1/2 cup of plain flour , 2 .5 cups of soft brown sugar, ( firmly packed )
1.5 tsp of dry mustard , 2 tsp of turmeric , 1/4 tsp of cayenne pepper , 1/2 tsp of curry powder , 2.5 cups of brown malt vinegar.
Mix all these to a smooth paste , now stir over a low heat till the mixture thickens and slowly bring to the boil. Add the drained vegetables , bring back to the boil , boil for 1 minute .
Remove , cool slightly , bottle and seal.
