LEMON PIE FILLING (K)

Prepare your tart case .
In a medium bowl whisk together 1/4 cup of castor sugar or sweetener  equivalent . 1 dsp of grated lemon rind , 1/4 cup of lemon juice and  2 eggs  until well combined .
Stir through 1/4 cup of thickened cream .
Pour this into the tart case .
Place the tart case on an oven tray and bake for 20 minutes until set
Remove from oven and allow to cool to room temperature , slice and serve .
Optional ....dust with icing sugar and serve with fresh strawberries and thickened unsweetened cream .




 

PAUPER`S CHICKEN

In a large bowl place 6 cups of place of plain flour with 1 and 1/2 cups of salt add enough water to make a semi firm dough ...
Turn out onto a floured bench , use a rolling pin to roll out a out dough in a circular shape .Sprinkle with a little mixed herb. ( Set aside )

Now towel dry a 1.5 kg chicken ,
Squeeze the juice of 1 lemon over the chicken and place the squeezed lemon into the cavity of the chicken .
Make a mixture of ghee or duck fat with you favourite herb ...I used a fresh herb mix (  basil , parsley  , oregano and sage ).
Place this mixture under the skin ,( breast side )
Enclose the legs with string .
Now place the chicken on the dough and wrap the dough around  to fully cover the chicken .


place in a deep dish .
Bake in an oven  at  200deg C for 120 minutes ( cook on the lowest shelf of your oven )



Remove from oven and allow to rest for 30 minutes till you crack the shell and serve immediately .


 



 

YOGHURT SLICE

Preheat your oven to 160 deg C
Process 2 cups of your favourite muesli mix  with 1dsp of coconut oil and  apple juice to make a spreadable mixture..
Then  press it into a lined slice tray .
Now place 1 cup of ricotta cheese , 1 cup of Greek yoghurt , 1/4 cup of cream cheese , grated rind of 1 lemon , the juice of 1 lemon , 2 egg whites and 2 tbs of apple juice in a processor ...and process until thick and soft ...( approx.
Pour the mixture over the base and bake until firm ....( approx.40 mins ...or till firm )
Cool and cut into slices .
(I added a dsp of passionfruit pulp )

CUBED BEEF WITH PRUNES

Soak 10 prunes in a cup of unsweetened apple juice for 1 hour .
Toss 400gm of cubed casserole beef , (fat removed ) in wholemeal flour and brown in a pan with 2 tbs of ghee and 1 large chopped onion .
Then add the prunes and apple juice along with 2 tbs of tomato paste .
Place in a casserole dish with 400gm tin of diced tomatoes .
Mix  together 1 tbs of cornflour , 1/2 tsp of nutmeg , dried sage with a little water to make a paste .
Stir into the casserole .
Add 3 large bay leaves , cover the casserole and gently simmer in a moderate oven until meat is tender ...2 hours .

That`s right, 103 days till Christmas .
I have already accepted 3 orders for Christmas cakes , this year the cakes will be circular and the decoration will be about the star

The cakes will be stored until decoration time .
