LEMON BROWNIE
Preheat your oven to 180 deg C .
Spray a slab pan with cooking oil spray and a sprinkle of fine polenta .
First beat together 4 eggs and set aside .
Now place 250 gm of softened butter/margarine in the bowl of your electric mixer with 430 gm of castor sugar and beat until smooth .
Add 1 and 1/2 cups of plain flour alongwith small amounts of the beaten eggs until smooth .
Finally add 1 cup of desiccated coconut , 1 tbs of lemon rind and 1/4 cup ( 60 ml )of lemon juice .
Spread the batter over the base of the prepared pan .
Bake in the preheated oven for 45 minutes or until a skewer inserted comes out clean .
Remove the pan from the oven and let the lemon brownie cool completely in the pan .
Slice into squares and dust with icing sugar to serve .
