DATE AND AVOCADO TANGO ( MOUSSE )

You will need to mash 2 avocados with 2 tbs of honey , the juice and rind of 1 orange and finally 4 tbs of chopped dates . Whip 150 ml of cream until stiff . Whip 2 egg whites until stiff. Fold through the beaten cream into the avocado mixture and then gently fold through the stiffly beaten egg whites , using a metal spoon . Serve in individual serving bowls . You can serve if you like with extra whipped cream on top .
