APPLE GINGERBREAD
Spray a loaf pan with cooking spray and preheat your oven to 180 deg C .
In a bowl stir together 1 cup of plain flour , 1/2 cup of quick cooking oats , 1/2 tsp of baking soda , 1 dsp of ground cinnamon , 1 tsp of ground ginger , 1/2 tsp of ground nutmeg , 1/2 tsp of ground cloves and a pinch of salt .
In a larger second bowl add 1/2 cup of soft brown sugar , 2 tbs of molasses , 1/3 cup of plain yoghurt , 2 lightly beaten eggs , stir until the eggs are fully incorporated .
Then fold in 1 cup of green apple ( peeled , cored and grated ) and 2 tbs of chia gel into te batter .
Bake in the preheated oven for 60 minutes .
Do the skewer test to check for doneness .
Remove to a wire rack and cover with a cotton tea towel until completely cool.
