JOHNNYCAKES ../.. FRIED SCONES .

Sift 2 cups of self raising flour with 1/2 tsp of salt into a mixing bowl .
Rub 30 gm of butter into the mix until it resembles coarse crumbs .
Make a well in the centre and add 2/3rds of a cup of milk to make a soft dough  using a knife .
Add a little more milk if necessary .
Turn out the dough onto a lightly floured surface
Gently roll into a log and cut into 1cm rounds .
Now heat a deep frying pan over a medium heat or a deep fryer heated to 160 deg C .
Add the scones in batches , frying until puffed and golden , about 4 minutes .
Transfer to paper towelling to drain , serve hot with golden syrup or honey ......
And you may know these as .....fried dumplings crisp and golden outside with a light soft centre , you can also add a savoury or sweet filling prior to frying .
