TURMERIC FRIED POTATO CHIPS ...
Preheat your oven to 200 deg C .
Boil 1 kg of 'all rounder' potatoes , in my day you would have had the choice of pontiac or desiree potatoes .
It's your choice to either peel or just wash the potatoes , but slice them into thick chips.
Now boil them in salted boiling water with 1 dsp of ground turmeric for 5 minutes .
Drain off the water .
Cover the the pot of the potatoes with a lid and shake the sliced potatoes rigorously to roughen the surfaces a little .
Place the chips on a couple of layers of paper towelling to dry off .
Heat your deep fryer with rice bran oil / canola oil and add the chips to the preheated fryer and fry till tender .
Serve sprinkled with salt .
If you are not into deep fried food , after having boiled and drained the chips , place the roughened chips on an oven tray and pour over 2 tbs of canola / rice bran oil , bake till the chips are crisp and golden .
Serve sprinkled with salt .
