MUSHROOM STROGANOFF WITH FETTUCCINE (V)
I absolutely love this mushroom stroganoff , ( if you are not so inclined , you can replace the mushrooms with 500 gm of beef rump ) .
I'm using mushrooms .
Heat 2 tbs of butter and 2 tbs of canola / rice bran oil and add 1 onion peeled and sliced and saute over a medium heat until the onion is tender .
Add 500gm of sliced mushrooms and cooked until softened , add 2 tbs of tomato paste and 2/3rds of a cup of sour cream and chilli flakes to taste ( optional )
Reduce heat and simmer for 2 minutes .
Turn off the heat and let sit for 5 minutes , to meld flavours .
Now cook 250 gm of fettucinne in salted boiling water , until el dente .
Drain the fettuccini .
Serve the fettuccini on the side and dress with chopped parsley .
