You can serve pumpkin soup as a simple dish /entree .
Easily making it a starting dish ..
This recipe is a simple pumpkin soup ...serve it as you like .
Combine 2 kg of peeled and sliced pumpkin with 1 x 400 gm can of whole tomatoes with 1 large onion , peeled and chopped and 4 litres of chicken feet stock .
Place the mixture in a pot and simmer until the pumpkin is tender .
Puree the pumpkin mixture , add a good pinch of salt , cayenne pepper and 2/3rds cup of cream .
Gently reheat , to serve sprinkle with fresh parsley .
Simply delicious .
