PRESERVED LEMON AND GARIC DRESSING

Place 1 tbs of minced garlic and a pinch of salt in a mixing bowl . Take 2 segments of preserved lemon and remove as much of the lemon flesh and pith as you can. Discard lemon flesh and pith . Finally chop the rind and combine with the minced garlic along with a tsp of dried parsley or coriander . Mix this dressing through drained chickpeas , lentlis , your choice of cooked pulse eg green beans . Preserved lemon and garlic dressing goes perfectly with any fish , pork or chicken dish .
