RAISIN AND PINEAPPLE LOAF .
Grease and line a 15cm x 25cm loaf pan with baking paper .
Preheat your oven to 160 deg C .
Now combine 250 gm of raisins with 432 gm can of undrained crushed pineapple , 125 gm of butter / marg and finally 1/2 cup of sugar in a medium saucepan .
Stir constantly over a medium heat until the butter has melted , now bring to a slow boil then reduce the heat and simmer uncovered for 3 minutes without stirring .
Cool.
Add 2 cups of self raising flour alternatively with 2 lightly beaten eggs using a wooden spoon .
Pour the loaf batter into the prepared pan.
Bake in the preheated oven for 45 minutes or until a skewer inserted comes out clean .
Stand in the cake pan for 5 minutes before turning out onto a cooling rack .
