CREAMY COCONUT AND MANGO PUDDING
Place 1 cup of quinoa in a large saucepan with 2 x 400ml cans of coconut milk and 3/4 cup of raw sugar .
Bring this to the boil and then reduce to a simmer , cover cook for 20 minutes until thick and creamy .
Meanwhile peel 2 fresh mangoes , thinly slice one half of a mango and set aside .
Cut the remaining mangoes into small pieces .
When the quinoa is soft , thickened and cooked , stir through the mango pieces and pour into individual serving dishes or a large serving bowl .
Sprinkle with toasted coconut and decorate with the remaining mango slices .
Refrigerate before serving .
