ANCHOVIES AND SPINACH WITH FETTUCCINI
This is such a simple dish and delicious to boot !
Place a pot of salted water on the heat to boil , add 400gm of fettuccini and return to the boil , bring to the boil again and cook till the pasta is tender , but not overly soft .
Drain the cooked pasta and lightly spray with cooking oil and toss the pasta .
Heat 2 tbs rice bran oil / canola in a pan add 10 bottled anchovies , drained and chopped along with 3 tbs of pine nuts , 3 tbs of minced garlic and 900 gm of baby spinach leaves .
Cook stirring through until the spinach is wilted .
Mix through the fettuccine toss lightly and serve .
