LAMB WITH GARLIC , CUMIN AND PEAS
This is a delicious combination and perfect for our very wet and cold spring weather .
heat 2 tbs of rice bran / canola oil in a pan .
Add 2 peeled and thinly sliced onions , cook until the onions are tender .
Add 500 gm of minced lamb and cook until browned .
Stir in 3 tbs of minced garlic , 1 tsp of cumin seeds , 1and 1/2 tbs of ground cumin , cook until fragrant .
Now add 1 cup of quinoa , 1 tbs of soy sauce , chilli flakes to taste ( optional ) .
Finally add 2 cups of hot water and 1 cup of frozen peas , season with a little salt and cracked pepper .
Stir to combine .
Cover and simmer on a low heat for 15 minutes or until the quinoa is cooked .
Serve in warmed bowls with cornbread as a side .
