MEATBALLS IN A RED WINE SAUCE
Combine 1 kg of ground mince with 1/2 cup of wheat germ, 1/2 cup of bread crumbs, 1 tsp of dried rosemary ,1 tsp of salt , 1 tsp of dried oregano , 1 tsp of marjoram and 1/2 tsp of mustard in a large bowl .
Add 1 onion peeled and chopped , 1 tbs of minced garlic , 1/3 cup of milk , 1 dsp of worcestershire sauce and a dash of tabasco / sriracha.
Mix well to combine and then shape into golf ball sized rounds .
Roll the balls in 1/4 cup of plain flour and the set aside .
Now fry off 200gm of bacon piecesin a large pan and then add the meatballs
Add 375 ml of water , 1/2 cup of red wine and 1 tbs of castor sugar , cover and simmer for 25 minutes .
Make a smooth paste with 1/4 cup of water and 1 and 1/2 tbs of flour , stir this paste into the pan and cook over a low heat until slightly thickened .
I served this with mixed vegetables and couscous .
