CHEESE DUMPLINGS ........Lenivye Vareniki


Put 500 gm of ricotta cheese
Along with 2 eggs and a pinch of salt in a bowl and mix together .
Add 200gm of all purpose flour
Fold in till thoroughly combined .
The dough should be soft and easily formed into a ball.
Place the dough on a floured board .
Cut the dough into 8 equal pieces .
Roll each piece into a sausage shape thick as your middle finger ..
Cut into 2cm (3/4 inch) sections .

Now bring a large pan of water to the boil.
Add tsp of salt .
Place half the dumplings in the boiling water ,
Simmer for 2 minutes till the dumplings rise to the top .
Remove from the pan and transfer to a colander
Rinse under cold running water
Place dumplings on paper towelling .
Repeat with the second batch.

Heat 30gm of butter or margarine in a pan
Add the drained dumplings
Saute till heated through and slightly golden.
Serve with a bowl of sour cream mixed with black pepper and finely chopped cornichons .
