CHICKEN WITH CREAMY PENNE

Boil a large pot of salted water and add 200 gm of dried penne , cook till tender but still firm . While the pasta is cooking heat an oiled pan ( 2 tbs ) pan over a medium heat and add 2 skinless , boneless chicken breasts and cook for 4 minutes each side . Pour in 5 tbs of dry white wine or you could use Chinese cooking wine or apple cider vinegar and increase the heat until the liquid has almost evaporated . Drain the pasta . Add 1 cup of frozen peas to the pan with the chicken along with the pasta and 5 tbs of cream, stir well and simmer for 2 minutes . Serve immediately and sprinkle with dried tarragon or fresh chopped parsley .
