CHOCOLATE MERINGUES

This recipe is for Shelley Giles ... Preheat your oven to 120 deg C Mix together 1/2 cup of icing sugar with 2 tbs of cocoa powder . Using the whisk on your mixer , whisk 2 egg whites until stiff then whisk in the sugar mixture 1 tbs at a time until the mixture holds its shape . Spoon into a piping bag fitted with 1/2 inch ( 1 cm ) plain nozzle and pipe into mounds on a baking tray lined with baking paper . Bake in a cool oven , preheated to 120 deg C , for 2 hours until crisp . Open the oven and leave the meringues to cool slightly ( 30 minutes )before transferring to a wire rack , to cool completely . Whip 1/2 cup of cream until stiff . Sandwich the meringues together with the whipped cream .
