PEARL BARLEY RISOTTO

Pearl barley is not a whole grain though it does have more fibre than white , brown and wild rice.
Place 1 litre ( 4 cups ) of vegetable stock and 1/2 tsp of saffron a jug , stir to mix well and let stand for 10 minutes .
Heat 2 tbs of  rice bran oil in a large saucepan over a medium heat .
Add 1 chopped onion ,1 dsp of minced garlic and 1 chopped fennel bulb ( small ) cook till the fennel is tender
Add 30gm  ( 1 and 1/2 cups ) of pearl barley .
Add 2 inch piece of finely chopped orange rind .
Stir for 1 minute until coated .
Add the stock mixture , bring slowly to the boil.
Reduce heat to low , simmer , covered for 20 minutes .
Then remove the lid , simmer uncovered for 20 minutes or until barley is tender .
Serve with pan cooked prawns cooked with chopped chilli and garlic , whole grape tomatoes .Topped with a fresh loose parsley leaves .
