PEANUT AND SPINACH CURRY (V)

Place 1 tbs of coconut oil in a saucepan over a medium heat .
Add 2  chopped onions and 1 tbs of minced garlic , cook until onion is tender and golden brown .
Add 1 x 420gm can of lentils ( drained )
1 x 400ml of cocnut milk
Simmer uncovered until reduced by half .
Then add 2 tbs of coconut cream , 1/4 cup of peanut butter , 1 tbs of castor sugar , 1 tsp of ground paprika , 1 tbs of fish sauce, juice of 1 lime , 1 small red chilli ( optional ) unseeded and finely chopped .
Stir well to combine ....
Now add 1 bunch of fresh spinach leaves , cook until the spinach has wilted .
Serve with rice or grain of your choice and garnish with chopped roasted peanuts .
