ROASTED RED ONION WITH THYME AND BUTTER

You will need 6 equal sized red onions . Preheat your oven to 200deg C . Remove the 1st layer of the onion skin , the dried loose layer . Slice off the bottom end of the onion , to give it a flat base . Slice each onion in a cross shape in the top , slicing half way down ( not right down ) . Now sprinkle into the gaps a little salt , then add a knob of butter and top with some chopped thyme . I put these filled onions beside my patted dried brined and stuffed chicken in an ovenproof dish. Now cook the dish in the preheated oven , until the chicken thigh juices run clear . These onions are just the best with a roast , so tasty and sweet .
