When cool enough to handle , scoop the eggplant flesh into your food processor , don't be overly concerned if some of the charred skin goes in with the flesh , it will just add a smoky element .
Now add 3 tbs of tahini the juice and finely grated rind of 1 lemon , 1 tbs of minced garlic .
Process till smooth .
While the mixture is processing , add 1/2 cup of olive oil in a thin stream .
Finaly add 1 dsp of ground cumin for an amazingly powerful flavour .
