CHOCOLATE CHEESECAKE

Grease a 20cm / 8" loose bottom cake pan . To make the base ,place 115gm of finely crushed plain biscuits in a large bowl and mix with 1 dsp of Dutch cocoa powder and 4 tbs of melted butter/ marg . Mix well . Now press the biscuit mixture into the base of the prepared pan . Now place 800gm of mascarpone cheese , 200gm of icing sugar , the finely grated rind of 1 orange and the juice of 1/2 an orange , now stir to combine . Add 175gm of melted dark chocolate ( 70 % cocoa) and 2 tbs of apera . Spread the chocolate mixture evenly over the biscuit layer . Cover with cling wrap and chill for at least 4 hours . To serve remove the cheesecake from the refrigerator and place the pan on a serving platter, open and remove the sides of the pan . Mmmm..heaven on a plate .
