Tonight in Castle Garden I prepared Chicken Breasts On A Flaming Sauce .
Slice 3 red onions in a hot pan along with 4 cloves of sliced garlic , 2 small red chillies finely sliced seeds included and 1 whole red capsicum finely sliced with 2 tbs of rice bran oil .
Combine and cook till vegetables are softened and aromatic .
Add 1 can of diced tomatoes and 1 tbs of capsicum powder .
Stir bringing to a simmer and then reduce heat and set aside .
Slice 2 chicken breasts lengthwise and char on both sides over an oiled griddle pan .
I spooned steamed white quinoa over a warmed bowl then topped with the flaming sauce and layered this with the sliced chicken breast . the dish was garnished with long spikes of chives .
CAUTION ..This is really hot .
