BISHOP`S BREAD
This is a colourful, hearty fruit loaf made with glace cherries and mixed dried fruit, nuts and medium Apera
I love it.
This fruit loaf will keep for 2 weeks in an airtight container in the fridge, can also be frozen.
Ingredients.....2 eggs, 125 gm of castor sugar, 1 tsp of baking powder, 125 gm of plain flour, pinch of salt, 1 tbs of butter / marg, 500gm of granulated nuts, 125 gm og glace cherries, chopped, 375 gm of mixed fruit.
Heat your oven to 160 deg C.
Prepare 1 large loaf pan.
Grease and line bottom and sides with baking paper.
Beat 2 eggs and 125 gm of castor sugar until sugar is dissolved.
Add the butter/ marg with a tbs of flour.
In another bowl sift 1 tsp of baking powder with 125 gm of plain flour and a pinch of salt.
Now add the chopped cherries and 375 gm of mixed fruit.
Now add 500 gm of granulated nuts to the fruit and flour mix.
Mix together and then stir in the egg mixture and stir to combine thoroughly.
Pour the batter into the prepared loaf pan, pushing the mix well into the corners.
Bake in the oven for 75 minutes until till firm to the touch when lightly pressed with fingers.
Remove from the oven and immediately drizzle with 75 ml of brandy.
Let the loaf cool in the tin.
Remove the cooled loaf, wrap in foil and store in the refrigerator till ready to serve.
