WHAT IS FOR BREAKFAST ?
BACON , CHEESE AND EGG IN TOMATO SHELLS
Prheat your oven to 200deg C .
You will need 1 large tomato per person .
Slice the bottom off the tomato and then using a spoon remove all the flesh ,being careful not to pierce the tomato shell .
Chop the flesh finely .
Place the chopped tomato flesh in a bowl and add 1 dsp of grated cheese per the number of tomatoes used .
Line the tomato shells with a trimmed slice of pancetta , then divide the cheese mixture between the tomato shells and top with an egg
Place the tomato shells in holes of a muffin tray .
Bake until the egg cooked to your liking .
serve with fingers of toast .
