CRISPY HERBED POTATOES

Ingredients.....750gm of 'all rounder' potatoes, 2 red onions, 6 tbs of canola oil, 2 tbs of minced garlic, 100gm of grated tasty cheese, 2 tbs of chopped basil, cracked black pepper to taste. Peel the potatoes and slice very thinly, place the slices in a bowl of cold water and cover for 10 minutes. Now drain and pat dry with paper towel. Peel and slice the onions. Heat the oil in a large pan over a medium heat. Add the sliced onions with the minced garlic and saute for 3 minutes; now add the potatoes and cook for 20 minutes, turning frequently, until they are tender and golden. Add basil to the pan and stir through. Sprinkle the grated cheese over top and cook without stirring until the cheese melts. Season with cracked black pepper .
