ROAST CAULIFLOWER WITH NUTS AND CREME FRACHE DRESSING

Preheat your oven to 22o deg C . Line 2 oven trays with baking paper . Mix together in a small bowl 60 l ( 1/4 cup ) extra virgin olive oil , 1 dsp of finely grated orange rind and 1 dsp of finely chopped thyme leaves .( optional you could add a pinch of dried chilli flakes .) Place 1 medium / large cauliflower on the baking tray and rub the cauliflower with 2 tbs of the oil mixture . Add 35 gm / 1/4 cup of choped hazelnuts nuts to the remaining oil mixture , stir the nuts through and pour over the cauliflower . Bake the cauliflower in the preheated oven for 50 minutes or until tender and lightly browned . DRESSING..... Process 150 gm of soft feta cheese , 125 gm of creme fraiche , 1 dsp of milk , 1 tsp of chopped lemon leaves , 1 tsp of finely grated orange rind . Process until smooth ... Dress the cauliflower with dried dill and drizzle with the creme fraiche dressing and a mixed leaf salad .
