LEMON CAKE WITH CARAWAY SEEDS

Simple and delicious ... Preheat your oven to 160 deg C . Grease and line 22cm ( 9") round cake pan . Place in the bowl of your mixer 185 gm of butter/ marg , 1/2 cup of castor sugar and 6 tbs of lemon curd . Beat until light and creamy . Now add 3 eggs lightly beaten separately along with a 1/3 rd of a cup of self raising flour with each egg . Finally add 1/2 tsp of salt and 1 tsp of caraway seeds . Pour into the prepared pan and bake for 1 hour or until the cake pulls away from the side of the pan ....this is a very old recipe and our ovens have improved over the years ...check for doneness at 40 minutes .
