MUSTARD CRUSTED SALMON WITH DILL AND LEMON
We will be preparing this dish in "Country cooking class' tomorrow.
Preheat your oven to 180 deg C .
Grease your roasting pan and lay your salmon fillets skin side down .
Place 2 tbs of Dijon mustard in a bowl with 2 tbs of minced garlic , 2 tbs of chopped thyme, the zest of 1 lemon , 3 tbs of lemon juice ,1 whole onion finely chopped ( white and green part ),3 tbs of dill finally add 1 tbs of peanut oil .
Mix thoroughly to combine .
Now mix in 1 cup of quinoa flakes and cracked black pepper .
Use your hands to squeeze the mixture together so it holds .
Divide the mixyure into four and spread evenly over the top of each fillet .
Drizzle lightly with a little peanut oil and bake / roast for 15-20 minutes until the topping is golden and the salmon is cooked .
Serve with mixed grain and or a salad .
