CREAMY COCONUT , MANGO AND GRAPE PUDDING
Place 1 cup of quinoa grain ( white ) in a saucepan with 1 cup of water .
Bring to the boil and reduce heat , cover and continue to simmer till most of the water has been absorded .( 2- 3 minutes ).
Now stir in 3/4 cup of sugar and 1 dsp of vanilla extract .
Pour in 1100ml of coconut milk and bring to the boil , then reduce heat and simmer for 30 minutes , stirring occasionally until the pudding is thick and creamy and the quinoa is tender .
Now sprinkle over 1 dsp of cinnamon powder and stir through .
Now peel 2 fresh mangoes , cube the flesh .
Halve 12 red and 12 green seedless grapes
Stir through the cubed mango and the grape halves .
Ladle the mixture into individual serving dishes or a medium sized serving bowl .
Scatter excess sliced grapes over top .
Finish off with 1/2 cup of the toasted coconuts flakes over top .
This pudding can be served warm or cooled in the refrigerator before serving . ( with or without cream )
