Place 2 cups of green beans , trimmed and sliced ,
2 medium carrots washed and sliced
2 cups of finely shredded cabbage
......into a steamer and cook for 5 minutes .
Transfer to a large bowl .
Add 1/2 cup of raisins
1/2 cup of roughly chopped walnuts .....now set aside and allow the mix to cool.
In a food processor , puree 1 garlic clove
1 chopped shallot
1 dsp of minced ginger .
Now add 1/2 cup of smooth peanut butter
2 tbs of soy sauce
2 tbs of fresh lemon juice
1 dsp of sugar
1/4 tsp of salt
1/4 tsp of cayenne pepper ...
Process until blended .
Add 3/4 cup of coconut milk ...and blend until smooth .
Pour the dressing over the salad , toss gently and serve .
This recipe is an interpretation of the gado gado salad.
